Ramen has become the frontrunner for the title of Japan’s national dish. No other food is so popular throughout the country, yet remains so multi-faceted. The categorical framework and definition of ramen continues to expand all the time; now it includes not only the shōyu, tonkotsu, miso, shio and tori paitan varieties, but also tsukemen and even abura soba creations. While there is a trend towards all-natural ingredients and higher quality in recent years, it is still the everyman’s best friend, usually costing less than 1,000 yen a bowl. It is because our love for ramen is real that we have decided it is time to get real about ramen.
